4 C. coarse chopped apples
1C. sugar (can use up to 2 C. if you prefer it sweeter)
1/2 C. oil
1 teaspoon vanilla
2 eggs (well beaten)
2 C. flour
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon
1 C. chopped nuts (optional)

Mix and press intoa foil lined or greased 13x9 baking pan. Bake 1 hour at 350 degrees. If desired frost with cream cheese icing.

This is easy to make and very tasty.
