I made this recipe up the other night with good results First, obtain enough pie crust dough to coat the bottom of a glass rectangular baking pan. Save some to put on top. You can ball up premade thawed pie crusts, or use a pie crust recipe of your choice. Add to a large pan: 1 bag of frozen mixed veggies 1 minced onion 2 large minced potatoes 1 lb cubed chicken 2 cans cream of chicken soup Thyme or Italian seasoning to taste Celery Salt to taste Cook all of these items until veggies and chicken are done. Pour filling into baking dish coated with crust dough. I then rolled out remaining crust and broke off pieces and layed on top in a jig saw puzzle fashion. Bake at 400 degrees until crust is golden brown. |
