1 lb. ground turkey 1 heaping tbsp. diced pimientos 1 heaping tbsp. chopped scallions 1/4 tsp. salt 1/8 tsp. pepper 1/2 small jalapeo pepper (optional) 1/2 tsp. chili powder (optional) 1/8 tsp. cumin (optional) 1/4 cup dry, unseasoned bread crumbs 2 tbsp. olive oil 4 slices Monterey Jack cheese Step 1 Gently mix turkey, pimientos, scallions and seasonings with a fork. Form mixture into 4 patties and roll each in bread crumbs. Step 2 Heat oil in a large skillet over medium heat. Add burgers and cook until nicely browned, about 3 minutes on each side. Top each burger with a slice of cheese and cover the skillet until cheese melts, about 1 minute. Makes 4 servings. Step 3 Variation: Spicy Mexican Burgers. Add half a small jalapeo pepper, seeded and finely chopped, 1/2 teaspoon chili powder and 1/8 teaspoon cumin to the raw turkey mixture. Continue cooking as directed above. Jalapeo cheese may also be substituted for the regular Monterey Jack, if desired.
