Chicken (boneless skinless works best but doesn't have to be, and I usually bone it and skin it myself) put it in a large skillet and cook on both sides, not necessarily all the way through. Season to taste I use salt pepper and garlic. Then pour some Salsa or Picante sauce over it. Cover and simmer until chicken is cooked through. Also good with pork or steak. Serve with rice. The rice is good with the salsa on it also.
