1 whole chicken 4 tsp salt 2 tsp paprika 1 tsp cayenne pepper 1 tsp onion powder 1 tsp thyme 1 tsp white pepper (I never use this) 1/2 tsp garlic powder (I always use more LOL) 1/2 tsp black peper 1 cup onion chopped In a small bowl combine all the spices. Remove giblets from chicken and clean cavity. Rub spice mix into chicken making sure to evenly distribute. Place in a ziplock bag and seal, refrigerate over night. When ready to roast stuff cavity with onion and place in a shallow baking pan. Roast uncoverd at 250 for 5 hours. After the first hour baste occasionally with pan juices.
