1-1/4 C fresh Michigan sweet cherries 8 ozs plus 2 Tbsp. of semisweet chocolate chopped 3/4 C granulated sugar 3/4 C cold coffee 6 ozs.(2/3C) butter 5 eggs beaten Rinse and pit cherries; set aside Put chopped chocolate in a large bowl. Combine sugar and coffee in medium saucepan. Bring to a boil over high heat; cook, stirring, until sugar is dissolved. Remove from heat. Immediately pour sugar mixture over chocolate. Beat in butter; fold in eggs and cherries. Pour mixture into a 6 cup loaf pan. Place pan in bain marie or water bath which reaches halfway up sides of pan. Bake in a preheated 350-degree oven 1 hour, or until pate is set. Remove from water bath and let cool. Loosen from pan, and serve in slices garnished with whipped cream. Makes 8 Servings |
