1 cup dried pasta (any) 1 large onion, chopped 3 cloves garlic, chopped 1 Tbsp olive oil 2 cups cooked beans (any, or combination) 28 oz. canned tomatoes (stewed, Italian-style, or plain) 2 cups broth (vegetable, chicken, or beef) salt and pepper to taste 1/2 cup Parmesan cheese generous handful of clean, torn, fresh spinach leaves
In large pot of boiling water, cook pasta until cooked through but still firm. Rinse in cool water; drain. In saucepan, saute onion and garlic in olive oil. Add beans, tomatoes, broth, salt and pepper. Simmer 30 minutes. Add pasta; heat through. Pour into large bowl or soup tureen. Add torn spinach to hot pasta/bean mix. Sprinkle with cheese. Easy and good!
