1 1/2 cups cooked instant rice
1 - 6 1/2 ounce can tuna packed in water*
1/2 cup diced celery
1/4 cup chopped green pepper
1/2 tablespoon lemon juice
1/8 cup finely chopped onion
1 tablespoon chili powder
1 teaspoon seasoned salt
1 teaspoon garlic salt
1/4 teaspoon ground cumin
1/4 teaspoon ground oregano
1/2 cup sour cream
1 tomato diced
corn chips
*Can substitute cooked beef, pork, or chicken
Combine cooked rice, tuna, celery, green pepper, lemon juice, and onion in a mixing bowl. Blend the seasonings with the sour cream and stir into the tuna/rice mixture. Chill for 1 hour. Garnish with tomatoes and serve with
corn chips. Makes 4 servings.
I found this one on the side of a Save-A-Lot generic box of rice. Looks appetizing and cheap.
