Peel and coarsely chop:
4 large potatoes
3 large carrots
1 large onion
4 cloves garlic
2 large heads broccoli
Saute in 1 Tbs. oil for a few minutes.
Add enough water to just cover vegetables, cover and simmer on Medium until veggies are all tender.
Using a hand potato masher or a hand blender, puree the vegetables to the consistency you want (we prefer a few chunks, but mashing everything makes it quite thick).
Salt and pepper to taste.
Stir in 1 Cup grated cheddar until melted.
