1 1/2 lbs. fresh broccoli (frozen works fine too) 3 cups water 3/4 tsp salt 1/2 cup cornstarch 1 pint half and half 1 lb velveeta 1/2 tsp pepper
Steam broccoli until tender. Place half and half and 2 cups water in top of double boiler. Add cheese, salt and pepper. Cook until cheese is melted. Add broccoli. In small bowl, mix cornstarch and 1 cup cold water. Stir into cheese mixture. Heat until soup thickens.
