3 medium carrots, halved & thinly sliced 2 celery ribs, thinly sliced 1 med. onion, chopped 4 garlic cloves, minced 1 can (30 oz) black beans, rinsed & drained*** 2 cans (14 1/2 oz each) chicken broth 1 can (15 oz) crushed tomatoes 1 1/2 tsp dried basil 1/2 tsp dried oregano 1/2 tsp ground cumin 1/2 tsp chili powder 1/2 tsp hot pepper sauce Hot cooked rice. In a slow cooker combine first 12 ingreedients. cover and cook on low for 9-10 hours or until vegetables are tender. Serve over rice. Makes 8 1 cup servings.
