Crust:
Go to the store & buy two ready made or.......
Use a standard graham cracker crust recipe. (!1/4 c. ghm. crumbs, 2tbsp. sugar, 6tbsp. margarine, melted)
It can also be made with chocolate crust.
Filling:
2-(21oz) cans cherry pie filling
3 (8oz) pkgs. cream cheese
1/2 cup sugar
2 eggs
1/2 teasp. vanilla extract
Topping:
1 cup whipped topping (cool whip) 1/4 cup sour cream
Preheat oven to 425
Spread half can of cherry pie filling on each crust or whatever it takes to cover the bottom.
Bake for 7 minutes
Reduce oven temperature to 350.
Meanwhile, in a small bowl, with an electric mixer, beat cheese with sugar, eggs, and vanilla until smooth.
Pour over hot cherry pie filling and bake about 25-30 minutes.
Cool completely
Before serving, add remaining pie filling (if none no big deal) and spread topping made by blending cool whip and bour cream over the top.
This is a prize winning recipe.
If you don't want the topping it is fine without it but great with. Also this is a "pie" so it is not as firm as cheesecake.
You can also make this in a cake pan if you want to serve small squares.
