3 eggs
2 tbsp milk
butter
cheddar cheese, grated
salsa, your choice of heat
chopped onion
chopped green pepper
sour cream
salt & pepper

Beat eggs and milk, salt, pepper, onion, and green peppers. Pour into hot skillet with butter melted in bottom. Cook into an omelet sheet. Fill with cheese and salsa. Fold and allow cheese to melt. Serve with sour cream on top if desired.
