| **CAKE** 
 1 cup  flour
 1/2 cup  whole wheat flour
 2 1/2 teaspoons  baking powder
 3/4 cup  sugar
 1/2 teaspoon  salt
 2 tablespoons  unsalted butter
 2 tablespoons  canola oil
 1 whole  egg white
 1/2 cup  lowfat buttermilk
 
 **TOPPING**
 
 3 tablespoons  rolled oats
 1/4 cup  maple syrup
 
 For Cake:
 Preheat the oven to 375F.  Sift the flours, baking powder, sugar and salt together.  Cut in the butter and oil a little bit at a time, until the mixture resembles cornmeal.  In a separate bowl, whisk the egg white and add the buttermilk.  Pour the wet ingredients into the dry and stir until just mixed.  Pour into a 9" square pan.
 
 For the Topping:
 Combine ingredients for the topping and spread over the batter.  Bake for 20 minutes.  Remove from oven and cool on a wire rack.
