1 cup shortening 1 cup sugar 1 cup brown sugar 2 eggs 1 tsp. vanilla 1 1/2 cups flour 1 tsp. salt 1 tsp baking soda 1 tsp cinnamon 1/4 tsp. nutmeg 3 cups quick oats 1 cup raisins Cream shortening and sugars. Mix in eggs and vanilla. Stir together flour, salt, soda, and spices. Fold into creamed mixture. Stir in oats and raisins. Drop dough by rounded teaspoonsfuls onto a greased cookie sheet. Bake at 350 for 10-12 minutes or until golden. Makes about 4 dozen cookies. ***NOTE***my friend showed me a way to make all cookie recipes yield stay soft cookies. In dough, add one box of vanilla instant pudding (just the powder). Cookies stay soft and chewy!
