4 cups flour
2 cups sugar
1 tablespoon cinnamon
1 teaspoon cream of tartar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter (no substitutes please!!)
3 beaten eggs
2 teaspoons shredded lemon peel
1 egg white
1 tablespoon water
coarse sugar

In a very large bowl combine flour, sugar, cinnamon, cream of tartar, soda and salt. Using a pastry cutter, cut in butter until mixture resembles cornmeal. (good for the upper body!) Add eggs and lemon peel. Mix well to
form dough.

On a floured surface roll dough into 1/8 inch thickness. Cut into shapes with a 2-3 inch cutter. Place on ungreased cookie sheets.

Combine egg white and water. Brush over cookies. Sprinkle cookies with coarse sugar. Bake at 375 degrees for 8 to 10 minutes. Cool completely. If desired, drizzle with melted chocolate. (really good)

Makes 5 to 7 dozen depending on how large your cookie cutter is.
