1 cup frozen small peas, thawed and drained 1/4 cup thinly sliced celery 1/4 cup chopped apple, cored and peeled or not 1 teaspoon finely diced onion 1/2 teaspoon chopped fresh mint, optional 1 1/2 tablespoons mayonnaise 1 1/2 tablespoons yogurt 2 teaspoons grated Parmesan cheese
Combine first five ingredients in bowl; set aside. Combine mayonnaise, yogurt and Parmesan cheese (if you don't want to use yogurt, use 3 tablespoons mayonnaise instead.) Pour dressing over pea mixture, tossing gently. Cover and chill.
