Here's a crunchy and delicious salad. Start with a large bowl, add 10-oz. pkg of frozen peas (do not thaw). If desired, add chunks of ham or chicken or turkey. Next a can of garbanzo beans, a can of water chestnuts, then some chopped onion and celery. To this, add a cup of diced Monterey Jack cheese. In another bowl, combine 8-oz. Ranch dressing, 1/2 cup sour cream and 1 Tb. Dijon mustard. Pour dressing over veggies and gently stir to combine. Sprinkle on top either bacon bits or sesame seeds. Refrigerate several hours. Serve with homemade croutons.
