Make up a batch of your favourite cornbread batter, and then add:
1 Cup grated cheddar cheese
4-6 sliced hotdogs
1 Cup frozen corn kernels

Fill greased muffin tins 3/4 full. Bake at 400F for 20-25 minutes.

By the way, this is also good with chopped cooked bacon or ham instead of hotdogs, and 1/2 a minced onion. It's a quick lunch on a busy day! Or serve with soup for an easy supper.
