3 cups buttermilk 3 cups flour (white or whole wheat) 1 Tbsp baking powder 1 1/2 tsp soda 1 1/2 tsp salt (or less) Mix together in order given. Fry on moderately hot, oiled griddle. Serves 4 - 6 EMERGENCY SUBSTITUTION: 1 cup buttermilk = 1 tablespoon white vinegar (or lemon juice) with regular milk to make 1 cup (let sit five minutes before using)
