Pizza-Style Meatloaf

1 1/2 pounds lean ground beef
3/4 cup Quaker oats (quick or old fashioned, uncooked) ( generics are just as good)
1/2 cup finely chopped onion
1/2 cup water
2 cloves garlic, minced
1 tsp. dried oregano leaves
1/2 tsp. salt (optional)
1/2 tsp. black pepper
1 (14 1/2 oz.) can Italian seasoned diced tomatoes, drained
1/4 cup sliced ripe olives
1 cup (4 oz.) shredded cheese for pizza

Heat oven to 375 degrees F. In a large bowl, combine first 8 ingredients, mixing lightly but thouroughly. On rack of broiler pan, shape beef mixture into round patty about 9 inches in diameter. Bake 30 minutes. Remove from oven. Arrange tomatoes and olives over top of meatloaf; Sprinkle with cheese. Continue baking 8 to 10 minutes or until meatloaf is to medium doneness (160 degrees F.) and cheese is melted. To serve, cut into wedges.
