1 pkg beef flavored rice mix with vermicelli (rice a roni)
1 lb stew meat, sliced thin
2 tablespoons vegetable oil
1 medium onion, sliced
1 can 4 oz mushroom stems and pieces, drained
1 large green pepper, cubed
2 stalks celery, thinly sliced
1 can bean sprouts, drained
1 pkg 10 oz frozen chopped spinach drained
2 tablespoons soy sauce

Prepare rice mix according to package directions. In a separate large skillet, brown meat in hot oil. Add onion slices, cover and cook 10-15 minutes. Add mushrooms, green pepper, celery, bean sprouts, spinach, and soy sauce. Cover and cook 5-8 minutes until vegetables are crisp and tender. Combine cooked rice mix with beef mixture and serve. Other vegetables can be omitted or added according to taste.
