1 cup cooking oil 2 cups sugar 3 eggs 2 cups self rising flour 1 teaspoon vanilla 3 cups chopped apples 1 cup nuts 1/2 cup raisins 1 teaspoon cinnamon 1 teaspoon nutmeg Combine oil, sugar & eggs. Beat well. Add flour and beat well. Add remaining ingredients and blend well with spoon or spatula. Turn batter into a greased & floured 13 x 9 pan. Bake at 350 degrees for 40 - 45 minutes. (Neat tip: make sure to lightly flour the apples, nuts and raisins so they distribute evenly throughout the cake.)
