6 boneless chicken breast
2 pkgs of cream cheese (low calorie may be substituted)
1/2 cup chopped green onions
12 slices lean bacon strips (turkey bacon may be used
but chicken breasts are not as juicy)
Combine cream cheese, chopped onion, garlic powder to taste, and a dash of salt. Stir until it is a smooth consistency (may be heated in Microwave to soften cream cheese).
Flatten chicken breast and form a pocket to hold cream cheese mixture. Make an "X" with 2 slices of bacon, and place chicken breast on it. Spoon cream cheese into pocket using a generous amount. Fold breast sides together, add a dash of salt on breast, and wrap with bacon, adding a toothpick to hold it in place.
Place in 350 degree oven for 45 minutes or until bacon is done. Any leftover creme cheese mixture can be spooned on hot chicken breasts.
Allow to cool and ENJOY a gourmet dish.
