1/3 cup chopped cooked turkey 1 1/2 tablespoon diced celery 1 teaspoon finely chopped onions 1/2 tablespoon chopped red or green peppers (chop and freeze the rest) 1/2 tablespoon chopped apple, peeled and seeded (eat the rest for a snack or dessert) 2 tablespoons Egg Beaters or other egg substitute 2 tablespoons grated Cheddar cheese 1 1/2 tablespoons low-fat mayonnaise 1 slice bread, toasted on one side 1 egg white 2 teaspoons grated Parmesan cheese Combine turkey, celery, onions, peppers, apples, egg substitute, 1 tablespoon of the Cheddar cheese and mayonnaise. Place bread on baking sheet, toasted side down. Spread untoasted side with turkey mixture and bake at 350 deg. for 15 minutes. Meanwhile, beat egg white until stiff. Fold remaining cheese into egg white and top sandwich with a dollop of the mixture. Sprinkle with Parmesan cheese. Boost oven to 450 deg. and bake until topping is puffed and golden brown.
